The puff pastry mini pizzas are delicious morsels to be served during a happy hour or in party buffets.

They are quick and easy to prepare, everyone likes them and can be stuffed in a thousand ways .. In short, they have one flaw … they finish too quickly.

For a really speedy recipe we can use ready-made puff pastry . It works both rectangular and round .

We offer you two simple but tasty fillings.

We will prepare the red mini pizzas topped with: tomato, anchovy paste and parmesan.

And some margherita mini pizzas topped with: tomato sauce. Then we will add mozzarella and parmesan at the end of cooking.

To make them even tastier, we will mix the tomato puree with a little oil, salt and dried oregano.

As simple as they are good.

How to prepare the puff pastry mini pizzas:

First, pour the tomato puree into a bowl and season it with salt, oil and dried oregano.

We mix well and leave aside. Then coarsely grate the mozzarella for pizza.

We open the roll of puff pastry on the work surface and with a 6-7 cm round pastry cutter we make some discs.

Arrange them on a baking sheet covered with parchment paper.

With a 4-5 cm pastry cutter we mark the center of each disk without pressing too much.

This step is optional, we will only need it to delimit the part to be stuffed.

We prick the center of each disk with the prongs of a fork.

 

For red mini pizzas:

We sprinkle a tuft of anchovy paste and spread it lightly.

Pour in some tomato puree and a sprinkle of Parmesan.

We bake at 200° for about 15-20 minutes or until the edges are golden.

 

For margherita mini pizzas:

Place a little tomato sauce in the center of each disk.

We bake for about 12-13 minutes at 200° and then take them out of the oven.

Sprinkle with Parmesan and also add a little mozzarella.

Put them back in the oven for a few minutes or until the cheese has melted.

Let’s take them out of the oven and serve them warm.

If we want to obtain tall puff pastry mini pizzas, we must choose a pastry that is not too thin.

Personally I have tried different brands, and I have noticed that the frozen ones are usually a little thicker than those found on the refrigerated counter.

Do not prick too vigorously the center of the mini pizzas, in this way they will grow a lot during cooking, but once taken out of the oven they will deflate slightly in the center remaining high at the edges.
