How to prepare pumpkin risotto with gorgonzola and walnuts:
Let’s prepare the broth and keep it warm.
Chop the walnut kernels, then peel and cut the pumpkin into small pieces or coarsely grate it.
Keep it all aside for a moment.
Cut the shallot thinly and brown it in a pan with the oil.
Add the rice and toast it, then blend with the white wine.
When the wine has completely evaporated, add the pumpkin and sauté it just a moment, stirring to prevent it from sticking.
Begin to wet with the hot broth, continuing to pour a little at a time, as the rice absorbs it.
Be careful not to let it dry too much before adding more broth.
As soon as the rice is cooked, turn off the heat and stir in the cold butter and gorgonzola, season with salt and pepper and let the risotto rest for a few minutes.
Serve, sprinkling with the chopped walnut kernels.

- the quantity of gorgonzola to put in the risotto must be evaluated according to the degree of flavor of the cheese, but also from your personal taste, so my advice is to mix the risotto with half of the gorgonzola, taste it, and only then decide whether to add it still.
- Use spicy gorgonzola for a nice contrast of flavors.
