A fresh and tasty dish to usher in the summer
The roasted sliced turkey rolls stuffed with boiled potatoes and pickled vegetables are the preparation with which I always inaugurate the first heat that June gives us.
I consider summer a wonderful season, and I always look forward to it, to be able to live a little more outdoors and do some nice hikes in the mountains.
In this period, however, the heat is often intense and sultry.
So I start to favor fresh dishes that do not require long preparations.
Today I propose a really tasty second course, which we can also prepare in advance and serve accompanied by a fresh salad.
Although I have never been a great lover of sliced turkey, I must admit that in this preparation the delicate flavor of the turkey enhances the dish and brings out the sweet and sour taste of the pickle.
So get the recipe and prepare them …
Preparation of roasted sliced turkey rolls
First we boil the potatoes and let them cool.
In the meantime, cut the pickle into small pieces and leave it aside for a moment.
Rinse the capers under running water and put them in the bowl with the pickle.
Peel the potatoes that will be cold by now, pour them into a bowl, cut them into pieces and mash them with a fork to obtain a lumpy dough.
Season with salt, add the mayonnaise and ketchup and mix well.
Add the pickled vegetables and capers to the potatoes, finally, mix and place in the refrigerator to rest for half an hour.
After half an hour we can prepare the rolls.
Place a couple of tablespoons of the mixture in the center of each turkey slice and roll it up.
We fold the side corners to prevent the filling from flowing out.
We can serve them immediately or cover them with cling film and store them in the refrigerator.
Anna’s advice:
We can replace the sliced roast turkey with cooked ham.
In this case it is important that it is not cut too thin.
Otherwise as soon as we begin to roll out the roll will break, letting the potato mixture escape.
Cut in half the rolls can be served as an appetizer.
