Almond crusted chicken breast


Almond crusted chicken breast is a really tasty and easy to prepare second course .

If you like almonds, this recipe is a great alternative to the usual pan-fried chicken breast, and can be customized by replacing a portion of almonds with breadcrumbs or adding some herbs.

In this version the chicken breasts are baked in oven, so they remain soft inside and form a crispy crust on the outside.

How to make almond crusted chicken breast

  1. First, cut the chicken breast into 8 fillets, and put it to marinate for 15 minutes with the juice of half a lemon and a little pepper.
  2. Pour the flour into a plate and spread the almond slices on a sheet of parchment paper.
  3. Break the two eggs into a bowl and beat them lightly with a fork.
  4. We turn on the oven at 200° static and let it heat up.

Drain the chicken fillets and dry them with kitchen paper, so that the external crust does not come off after cooking.

For the same reason we will put the salt only at the end of cooking.

Flour the chicken fillets, then dip in the eggs.

Finally let’s bread them with the almonds on both sides, pressing lightly to make them adhere well.

Place the crusted fillets on a baking dish lined with parchment paper and lightly oiled.

Let’s bake them for about 20 minutes.

Then, turn them gently and continue cooking for another 5-10 minutes, until the almonds are golden brown.

Now we can salt and serve them.

Try them accompanied with vegan mayo with soy milk .
