A rich breakfast to start the day well
The sweet apples and chocolate omelette is my absolute favorite breakfast .
It has everything I need to start the day on the right foot.
Egg proteins, the sweetness of apple and maple syrup and the most delicious part given by the dark chocolate that melts inside the omelette.
This recipe in our house has become the ritual of Saturday morning, a bit like pizza on Saturday evening.
I prepare it with what we could define as a super sweet red, or the Envy apple.
It is a very sweet, juicy and very crunchy variety, which for me lends itself very well to this recipe.
In fact, by adding small pieces directly into the egg mixture, the apple does not overcook and remains fleshy ….
Really, what I propose today is just one of the many versions that I delight in preparing.
In fact, the omelette, a close relative of our omelette, really lends itself to infinite variations.

Preparation of sweet apples and chocolate omelette
First we cut the apple into four parts. Then peel a quarter of it and make it into small pieces and leave it aside for a moment.
Pour the 2 eggs, 2 tablespoons of vegetable milk, a tablespoon of maple syrup and a pinch of cinnamon into a bowl.
We beat with a fork to mix all the ingredients.
We also combine the pieces of apple and mix.
Heat the knob of butter in a non-stick pan over high heat and, when it is melted, lift the pan from the heat and move it making sure that the butter greases the entire surface of the pan.
At this point, pour the egg mixture and with the help of a fork, move the pieces of apple so that they cover the eggs evenly.
We wait for the compound to start to set; it will take about 10/15 seconds.
We lower the heat and put the lid on.
When the omelette is golden underneath, but the surface is congealed but still a little slobbering on top, (it will take about 2 minutes) remove the lid, pour the chocolate chips on one half of the mixture and fold back with the help of a spatula the omelette on itself, as if to form a half moon.
Let it cook for 10/15 seconds and serve.
Let the omelette rest for a few minutes before tasting it, so that the chocolate has time to melt.
Anna’s advice:
To make a good omelette it is important to use a non-stick pan, preferably with a thick bottom.
A very popular variation in my home is the one that involves the use of banana instead of apple.
If, on the other hand, you want a smaller omelette, just halve the quantities of ingredients and use a smaller pan for cooking.
