A fresh and crunchy salad
Celery and apple salad is a very popular dish, simple and quick, but at the same time refined.
This variation is inspired by the original Waldorf salad, invented at the Waldorf-Astoria Hotel in New York in 1896.
It seems that the original recipe provided for the use in equal parts of celeriac and apple, all seasoned with mayonnaise.
The nuts were added later.
For this preparation I use celery hearts or white celery stalks, which are more available and in my opinion just as good.
I find the perfect pairing for this salad to be chicken.

Preparation of the celery and apple salad
Wash the celery and scald it for a few minutes in boiling water, it should soften only slightly.
Let it cool completely, then cut it into strips.
Peel the apple, core it and cut it into cubes or strips.
Pour the celery and the apple into a bowl and season it with salt, then add the 4 or 5 tablespoons of mayonnaise, the roughly chopped walnuts and mix well.
