Scrambled eggs with bread crumbs I consider them a real time-saving recipe.
I often make them when I get home late and I don’t have anything ready in the fridge.
All I have to do is stir-fry some vegetables, add the eggs, scramble them and complete with some bread crumbs … and voilà, lunch is served in less than 20 minutes.
The chicken egg it is a very popular food in kitchens all over the world.
First, because it provides a good protein intake; second, because thanks to its versatility, it can be consumed as a single dish or an ingredient in many recipes.
Think for example of stuffed eggs, mayonnaise, carbonara and so on … there are many recipes that contain this extraordinary food.
If you are not intolerant to egg, you probably also use it frequently in the kitchen …
I often use it as second course and also for breakfast.

Preparation of Scrambled eggs with bread crumbs
First, slice the bread and toast the slices in a non-stick pan or in the oven. Let it cool down.
Meanwhile, cut the onion and peppers into thin slices, and cook them in a pan with salt, oregano and a drizzle of oil.
The vegetables should be soft, so if necessary add a drop of water and cover with the lid.
Pour the bread, dried tomatoes, basil, a little oregano, Parmesan cheese and a pinch of salt into the mixer, whisk intermittently until you get coarse crumbs.
We taste and adjust to our taste, adding some seasonings if necessary.
Break the eggs into a bowl, add salt and pepper and beat them with a fork.
As soon peppers are cooked, distribute them on the plates and add a knob of butter to the same pan.
When it has melted, pour the eggs and scramble them.
Let’s not over-cook them, as soon as they’re ready, pour them over the peppers.
We generously sprinkle the eggs with bread crumbs … and serve immediately …. Enjoy your meal!😁
